Baked Flathead

Ingredients
8 Medium - Large potatoes
3 red onions
2 Tomatoes
2 tsp Crushed Garlic
1 tsp Seeded Mustard
Zest of 1/2 lime
800g South Australian Flathead
150mls Olive Oil
Salt & Pepper to taste

Method
1/4 the potato's and tomato's
Cut the onions into wedges
put into a bowl add lime zest, olive oil, salt and pepper mix well
Spread out on baking tray lined with baking paper
Cook at 220c for 20 mins
Add flathead cook further 6 mins
Serve with a squeeze of lime.
